A HEALTHY NUTELLA

I’m not sure if it’s just Geelong or if the same thing is happening across Australia… Here in Geelong at least over the past few months, people can’t seem to get enough of NUTELLA. It’s everywhere! All the cafes and bakeries are selling-out of Nutella Donuts, there are Cronuts, Nutella molten puddings, jars of it are on the front shelf of every single supermarket and it even comes in ridiculous-sized jars.

As much as I love it, I know it’s packed with nasties. So I’ve come up with a healthy alternative!

 

Recipe Type: GF, DF, RSF, V, Paleo

Banana ice-cream (just frozen banana blitzed in a blender) topped with my Healthy Nutella.

Ingredients:

  • 1 cup hazelnut meal or roasted hazelnuts (skins removed)
  • 2-4 tbsp raw cacao powder (to make as chocolate-y as you like)
  • 2/3 cup Almond milk
  • 1-3 tbsp honey (or other liquid sweetener), adjust to desired sweet-ness
  • Pinch salt

 

Method:  

  1. If using whole roasted hazelnuts – first blitz them in a food processor until like a flour.
  2. Place all ingredients in a food processor or blender and blend until silky smooth (you’ll need to stop every 20-30sec to scrape down the sides and make sure it’s all blended).
  3. Add more milk for desired consistency if required, adjust to taste for cacao and honey.
  4. Store in a glass jar in the fridge.
