Best Ever Beetroot Brownies!

MY OH MY.

I never thought brownies could taste this good. I was wrong.

Recipe Type: GF, DF, RSF, V, Paleo

Serves 16 Brownies
Time 45min

Ingredients:

Brownie:

  • 1 C grated beetroot
  • ¾ cup flour of choice (almond meal, coconut, buckwheat or a mixture)
  • ½ C Raw Cacao powder
  • ¼ C Greek Yoghurt/Coyo/Coconut Cream (coconut cream is best)
  • ½ C milk of choice
  • 3 t baking powder
  • 3 T melted coconut oil
  • 1 big T chia seeds
  • Sweetener of choice to taste
  • handful of chopped nuts (I love walnuts!)
  • handful of chopped raw chocolate

Icing:

  • 1/2 C Raw Chocolate
  • 1/2 C Coconut Cream
  • Sweetener of choice if desired.

Method:

  1. Preheat oven to 180degC and line a 20cm square baking tin with baking paper.
  2. Mix all Brownie ingredients together in a big bowl, making sure they’re all well combined.
  3. Transfer mixture to lined baking tray and spread out evenly.
  4. Bake for 20-30mins (depending on your oven) or until cooked through (test with skewer). 
  5. While the brownies are baking – make your icing.
    1. Melt raw chocolate in a glass bowl over some hot water.
    2. Stir in the coconut cream and sweetener.
    3. Allow to sit and firm-up slightly.
  6. Once brownies are cooked, remove from oven and allow to cool completely before icing.
  7. Remove unsliced brownies from the baking tray and spread the icing evenly over the top. Slice into appropriate brownie-sized portions and enjoy! Store in the fridge for a few days in an air-tight container in needed.
