RAW LAMINGTON BLISS BALLS
Lamingtons to me are a gorgeous blend of coconut, chocolate, raspberry goodness. I always loved the ones with the jam and cream in the middle and I thought it would be hard to recreate in a bliss ball but I was wrong! These little bites manage to capture all the freshness of the raspberries, decadence of the chocolate and crunch of the coconut all in one! Give them a go this Australia Day!
Raw, Gluten-Free, Paleo, Vegan, refined-sugar free and absolutely SCRUMPTIOUS!

Time 10 min
Ingredients:
- 1 C raw almonds (or other nut/seed of choice)
- 1/2 C desiccated or shredded coconut
- 1/4 C raw cacao powder
- 1/3 C dates soaked in hot water for 15min*
- 1/2 C frozen raspberries
- Pinch salt
- extra desiccated coconut for coating.
Optional: 1-2 T extra coconut oil
*For substitute Dates for any other dried fruit or extra raspberries if you like too!
Method:
- Blitz nuts, coconut, cacao and salt in a processor until fine and combined.
- Add the remaining ingredients and process until the mixture comes together (you may need to scraped down the sides to make sure everything gets combined.
- Separated into tablespoon-sized portions and squish/work/roll into balls.
- Garnish with desiccated coconut if desired.
- Enjoy!
