Satay Salmon with Satay Cauliflower Rice

Wholefood satay is such a versatile condiment! This satay salmon is simply delicious salmon marinated in my Easy Satay Sauce before grilling and serving with satay cauli rice. Takes all of about 20 mins to serve up and tastes AMAZING!

Recipe Type: GF, DF, RSF, Paleosatay salmon

Serves 1
Time  20 min

Ingredients:

  • 1 fillet of salmon
  • 1/3 C Satay Sauce (recipe here)
  • 1.5 Cup riced cauliflower (cauliflower that has been grated or processed so that it is rice-like)
  • 1/2 Cup grated carrot
  • 2 spring onions
  • 4 button mushrooms, sliced
  • 1/4 of a red capsicum, sliced
  • handful of kale, shredded

Method:

  1. Marinate the salmon overnight in 1 T of the satay sauce.
  2. For the salmon:
    1. Heat a fry pan over medium heat.
    2. Grill the salmon until cooked to your liking on both sides.
  3. For the Cauliflower Fried Rice:
    1. Heat a fry pan over medium heat.
    2. In a little water or olive oil, sautée the spring onions, mushroooms and red capsium for about 2 minutes.
    3. Add the riced cauliflower, kale, grated carrot and remaining satay sauce and sautée while mixing with tongs to combine the sauce and all veggies while heating through.
  4. Transfer the cauliflower fried rice to a plate/bowl, place the cooked salmon on top and garnish with extra spring onions.
