LUNCHBOX-FRIENDLY APRICOT AND COCONUT BLISS BALLS
These nut-free Apricot and Coconut treats are perfect for your kids’ (and your!) lunch-boxes. Just 4, simple ingredients + 5 minutes and all your children’s friends will be wanting you to pack their lunches!

Ingredients:
- 2/3 cup dried apricots, soaked in hot water for 15 min
- 1 cup rolled oats or quick oats (or quinoa flakes)
- 1 cup shredded or desiccated coconut
- 2 tbsp coconut oil, softened or melted
Method:
- Blitz all ingredients together in food processor until the mixture sticks together when squeezed.
- Roll into balls or press into a tray to make into a slice.
- Garnish with extra desiccated coconut!
- Store in a container in the fridge (will travel fine to school when eaten on that day).
