This beautiful, creamy, flavourful Dill Pesto is the perfect accompaniment to fish, chicken and even lamb! As a bonus, the use of walnuts or macadamia nuts and omission of garlic makes it low reactive, FODMAP and Sibo compliant! Try it in place of Basil Pesto with Zoodles too.

A piece of salmon topped with Dill Pesto, baked in the oven for 10 minutes = PERFECTION! Served with Carrot and Eggplant chips and salad!


  • 1 C walnuts or macadamia nuts
  • juice of 1 lemon
  • 1 large bunch dill
  • 2 decent handfuls rocket
  • 2 sundried tomatoes (for low FODMAP ensure they haven’t been marinaded in garlic/onion)
  • 1/3 C EVOO
  • generous amount of himalayan rock salt and pepper to to season


  1. Place all ingredients into a food processor and process until they are well combined (should resemble a pesto). You may want to add a little water to help.
