Lettuce Tacos – Low FODMAP and Sibo Friendly

As many of you know, I really love Mexican flavours. See my Vegan Mexican Bean Burgers for another cool recipe. Another one of my go-to Mexican meals to make at home is “Lettuce Tacos”. Everyone has their own way of enjoying tacos but this is my way and I wanted to share it with you. It’s simple, delicious, paleo, and I’ve now even included low FODMAP/SIBO options.

It’s really just a lighter version of a classic. For family-friendly option, have some grated cheese, sour cream (or greek yoghurt) and taco shells for those who don’t like to use lettuce leaves.

Time  20 mins, Serves 2 lettuce tacos

Mexican ‘chilli’:

  • 300g your favourite mince (kangaroo, chicken, beef, pork, turkey etc. You can also use fillet meat, cut into strips, like beef, chicken, fish)
  • 3 tsp Mexican Spice Mix (use low FODMAP options if necessary)
  • 3 whole tomatoes, diced
  • 1/4 cup bone broth or veggie stock
  • 1/2 zucchini, diced
  • 1/2 red onion, diced (omit for low FODMAP)
  1. Place all these ingredients into a frypan over medium heat and cook through, add a little extra bone broth or more tomatoes if you like to allow it to simmer and really absorb flavours.

For the Salsa:

  • 1/2 a red capsium, diced
  • 1 radish, grated
  • 1/2 a red onion, diced (it for low FODMAP)
  • 1/2 a carrot, grated
  • 5 cm cucumber, diced
  • 1 tomato, diced
  • 1/2 a bunch coriander, roughly chopped
  • handful of rocket
  • handful of shredded kalelettuce tacos
  • 1 T EVOO
  • juice of 1/2 a lime
  • salt and pepper to season
  1. Place all ingredients into a medium bowl and toss together.

For the Guacamole:

  • 1/2 an avocado
  • juice of 1/2 a lime
  • 1 T EVOO
  • salt and pepper to taste
  • Optional: chilli powder, fresh coriander, diced red onion, diced red capsium for texture.
  1. Smash the avocado with a fork in a small bowl and mix in the other ingredients until well combined.

Finally:

  • You’ll also need some Cos lettuce to act as your Tacos.
  1. Spoon some ‘Chilli’ mix into your Cos lettuce leaf.
  2. Top with some guacamole and salsa and eat using your hands!
  3. Optional: Add grated cheese and/or sour cream if you wish!
