Eggs are an amazing source of nutrients! From healthy fats through to protein, vitamin D, B12 and lecithin. This omelette takes a total of about 10 minutes to make so there’s no “I don’t have time to make a healthy meal” excuse valid here! Even make it the night before and you’ll be set for breakfast the next TWO days!

And why limit to an omelette to breakfast, why not take leftovers to work for lunch or whip one up for an easy weeknight meal?

Ingredients:

  • 4 medium eggs
  • 1/2 cup milk of choice
  • 6-8 cherry tomatoes
  • 1/2 onion, diced
  • 3 rashers nitrate-free bacon, diced
  • 2 cloves garlic, crushed
  • 3 medium mushrooms sliced
  • handful of spinach or swiss chard
  • handful your favourite cheese to top
  • pinch salt, pepper and any extra herbs you like

Method:

  1. Preheat grill or top section of the oven to 180degC.
  2. Whisk eggs, milk, salt, pepper together in a bowl, set aside.
  3. In a medium-sized pan, over medium heat, salute the onion, garlic, bacon and mushrooms until just cooked, add spinach/chard and just mix through.
  4. Slowly pour the egg mixture into the pan and ensure evenly spread throughout.
  5. Place the cherry tomatoes evenly around the omelette.
  6. Cook over medium heat on the stove top for 5 minutes.
  7. Sprinkle cheese over the top then transfer to the grill/oven for a further 4 minutes (to cook the top).
  8. Serve as is or with salad/toast whatever!
