Ingredients:
- 1-2 handfuls of your favourite salad greens (baby spinach, fancy lettuce, rocket etc.)
- 6 steamed brussel sprouts (or other left-over steamed veggies like broccoli, cauliflower)
- 4 cherry tomatoes, halved
- 5 cm length of cucumber, sliced your favourite way
- 1/2 cup cooked chickpeas (if using canned chickpeas, ensure they are well rinsed and drained)
- 1 T sunflower or pumpkin seeds
Simple Dressing of 1T EVOO and juice of half a lemon or why not dress with this creamy avocado dressing here.
Method:
- Place salad greens in a bowl or plate as the base.
- Top with the rest of the vegetables, chickpeas and seeds.
