Vital Ingredients to a Healthy Cooking Class at Vines Road!

On Sunday 2nd August, Dave, Shelley, Julie, Sylvie, Karen and Rose spent their Sunday learning just how easy healthy cooking really is at the PB Lifestyles Full Health Cooking Class at Vines Road Community Centre!

We started the day making some delicious Peanut Butter and Caramel Bliss Balls – which normally only takes 10minutes but took a bit longer after everyone needed to try my home-made peanut butter!

We then moved onto a beautifully smokey Eggplant and Capsicum Dip which inspired everyone to go home and make it themselves and even try a different version using other vegetables like carrots and pumpkin!

It was then time to get stuck into making our lunch for the day! First up was my “Cheesy” Vegetable Gratin (which can be made vegan by taking out the bacon and parmesan).

Second course was Chicken and Pesto Zucchini Pasta! The pesto was a MASSIVE HIT with everyone, full of flavour and simple, staple ingredients.

Dessert was a Paleo Apple and Strawberry Crumble with whipped coconut cream. All participants were blown away by the deliciousness and ease of making whipped coconut cream, simply place the entire contents of a can of full fat coconut cream in a blender, blend for 30-40 seconds then place in a jar in the fridge for several hours. Voila! You have a lovely, firm coconut cream! You could add some vanilla bean/honey/ginger etc. if you like at the blending stage for other flavour.

Karen’s big take-away from the day was about following recipes – you don’t always need to have all the ingredients – she learnt how to make exchanges for what she has in the fridge and pantry.

The VARIETY of uses for our vivacious vegetables was another big learning for Dave, Sylvie and Julie.

While Shelly and Rose loved the use of a blender to make coconut cream.

There were 2 resounding winners for ‘Favourite Dish of the Day”;

  1. Peanut Butter and Caramel Bliss Balls.
  2. Eggplant and Capsicum Dip.
