RED VELVET BLISS BALLS

Red Velvet cakes are some of the most decadent yet delightful treats on the market, so I was inspired to try a healthified version of it. To make a cake or cupcakes, rather than balls – all you have to do is spread out in a lined cake tin and set in the fridge or similarly in cupcake pans for cupcakes!

Serves 30 balls

Ingredients

  • 1 C grated beetroot
  • 1.5 C raw cashews
  • 1.5 C desiccated coconut
  • ½ C raw cacao powder
  • ½ C dates (soaked in hot water for 15 min)
  • 2 T goji berries
  • 1 t vanilla paste
  • pinch salt

Method:Red Velvet BB 2

  1. Blitz cashews, coconut and cacao together in food processor until cashews are well ground.
  2. Add remaining ingredients and process until the mixture comes together (you may need to stop processor and scrape down the sides every now and then).
  3. Roll into Tablespoon-sized balls and coat in extra coconut or cacao if desired.
  4. Store in a container in the fridge for up to 3 weeks.
