RED VELVET BLISS BALLS
Red Velvet cakes are some of the most decadent yet delightful treats on the market, so I was inspired to try a healthified version of it. To make a cake or cupcakes, rather than balls – all you have to do is spread out in a lined cake tin and set in the fridge or similarly in cupcake pans for cupcakes!

Ingredients
- 1 C grated beetroot
- 1.5 C raw cashews
- 1.5 C desiccated coconut
- ½ C raw cacao powder
- ½ C dates (soaked in hot water for 15 min)
- 2 T goji berries
- 1 t vanilla paste
- pinch salt
Method:
- Blitz cashews, coconut and cacao together in food processor until cashews are well ground.
- Add remaining ingredients and process until the mixture comes together (you may need to stop processor and scrape down the sides every now and then).
- Roll into Tablespoon-sized balls and coat in extra coconut or cacao if desired.
- Store in a container in the fridge for up to 3 weeks.
