Apple Pie Bliss Balls

Isn’t there something just so comforting, warming and classic about a hot, steamy Apple Pie? The beautiful caramelisation of the cooked apple. The aroma of the cinnamon and nutmeg spice. The crunch of the pastry crust. The creaminess of the ice-cream melting on top.

Mmmmm…. my mouth is watering just thinking about it!

And so began my mission to capture this in a simple and healthy morning or afternoon snack! I wanted something easy to eat at my work desk or on-the-go for my handbag (hot apple pie with ice cream is not always the most practical…).

These Apple Pie Bliss Balls encapsulate all of my favourite Apple Pie elements in every single mouthful (except maybe the ice cream). Do your best not to devour them all at once!

Recipe Type: GF, DF, RSF, V, Paleo

Serves 20
Time 20 min

Ingredients:

  • ½ cup Almonds
  • ½ cup Walnuts
  • ½ cup Pecans
  • (I find this combination of nuts the best for flavour. However, if you don’t have all of the different kinds then just make your total ‘nut quantity’ 1½ cups)
  • 2 tbsp linseed meal
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 tbsp coconut oil
  • 1/3 cup dates , soaked in hot water for 15min (drained)
  • 2/3 cup dried apple pieces
  • extra desiccated coconut for garnish if desired.

Method:

  1. Blitz nuts and linseed in a processor until they become a coarse flour.
  2. Add the remaining ingredients and process until the mixture comes together.
  3. Separated into tablespoon-sized portions and squish/work/roll into balls.
  4. Garnish with desiccated coconut if desired.
